2 sticks unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 cups self-rising flour
2 teaspoons ground cinnamon
2 ½ cups uncooked regular oats
1 cup golden or dark raisins
1 cup chopped pecans (optional)

Directions:

Preheat the oven to 400º

Cream butter, granulated sugar and brown sugar with an electric mixer until light and fluffy, around 3 minutes.

Add the eggs, beating until well blended.

Reduce the mixer speed to low and gradually add the flour and cinnamon.

Stir in the oats, raisins and (optional) pecans.

Drop tablespoons of batter onto uncreased baking sheets.

Bake 9 to 10 minutes or until golden brown (I usually shoot for about 9 minutes with little to no brown so the cookies are still soft.) Cool on wire racks.

Store in an airtight container between layers of wax paper.
