1¼ cup cake flour
½ cup granulated sugar
1½ cup egg whites
¼ tsp salt
1½ tsp cream of tartar
1¼ tsp vanilla
½ tsp almond extract
1½ cups sugar, added in 4 additions

Directions:
Directions:
Sift together the cake flour and ½ cup sugar four times. Combine egg whites, salt, cream of tartar, vanilla, and almond extract in large bowl. Beat until moist, stiff peaks form. Add the sugar, ¼ cup at a time. Fold in flour in 4 additions. Put in never-before greased angel food cake pan or loaf pan, or it will not rise high. Bake at 350ºF for 35-40 minutes.
