1 cup hot milk
1 cup mashed potatoes
2 large eggs
1/2 cup butter, melted
1 tsp. salt
½ cup sugar
2 package yeast, ½ cup warm water
4½ cups flour
Directions:
Directions:
Heat milk until warm, and blend with mashed potatoes. Let mixture cool to warm temperature.

Add a pinch of sugar to yeast and water. Mix well, cover, and let sit for 5-10 minutes, allowing yeast to activate.
Add yeast and water to potatoes.
Add eggs, rest of sugar, salt, and melted butter. Blend well.
Add the rest of the flour, ½ a cup at a time, until all the flour has been mixed in, or until the dough no longer sticks to the sides of the bowl.

Coat a large bowl with cooking spray. Add dough and cover with a dishtowel. Let sit for an hour, or until the dough has doubled in size.

Punch dough down. Form dough into balls and place in a greased casserole dish. Cover the prepared dough with a dish towel and let rise again for another hour.

Preheat oven to 350F.

Bake rolls for 25 minutes uncovered, or until tops of rolls are golden.

Serve immediately!
