1C shortening (or ½C oleo or butter); 1 egg; 1C sifted confectioners sugar; 2½C flour, sifted; 1tsp. vanilla extract; 1tsp. peppermint extract; red food coloring

Directions:

Cream shortening and add in the egg, followed by sifted sugar.

Sift flour (and salt if using) and add to mix. Split mix in half. Mix in vanilla extract to one half. Mix in red food coloring and peppermint extract into other half.

Put dough into fridge to chill. When working with dough, work in small amounts leaving remainder in fridge to stay cold.

On wax paper, roll white and red dough into ropes and slice into 3" sections. Twist two colors together and form a candy cane shape.

Bake at 375º for 7-9 min.

Grammie made these cookies every Christmas when we were growing up. She'd send them to Greenfield in our usual cookie tins (always with a piece of bread at the bottom). These were the most fragile of her Christmas cookies, but it wasn't Christmas without them.
