Squash Filling


Ingredients:

1 can One-Pie Squash; 1C light brown sugar; ½tsp. salt; 1tsp. cinnamon; 1tsp. ginger; ½tsp. all-spice; 1C (8oz.) evaporated milk; 3 eggs, beaten lightly before mixing.

Directions:

In large bowl, combine squash, sugar, and spices.

In separate bowl, mix eggs and evaporated milk.

Add together, mix, and pour into pie shell.

Bake at 425º for 40-45min.
 

Pie Crust (makes 2 10" crusts)

2⅔C flour; 1C Crisco; 1tsp. salt (optional); 6-8tbsp. ice-cold water

NOTE: This is a recipe for 2 crusts. You can try to 1/2 the recipe if you only need 1 crust.

In a large bow, use a dough blender to mix flour and Crisco (and salt if using) adding cold water 2tbsp. at a time until dough forms and almost cleans the sides of the bowl.

Gather dough into a ball and split in half.

Flour rolling pin and pastry mat and roll out pie crust to 10".

While most families enjoy Pumpkin Pie at Thanksgiving, the Murphys always had Squash Pie. Grammie's recipe is different than the one on the One-Pie can and far superior.
