1/2 lb. thickly sliced bacon
3 T. olive oil
2 1/2 large onions, coarsely chopped
3 large garlic cloves, minced
1 28 oz. and 1 16 oz. can tomatoes, chopped with liquid
1 T. tarragon or 2 tsp. sugar
2 tsp. salt or to taste
1/4 tsp. crushed red pepper flakes
1/4 c. parsley, minced
1 1/2 lbs. pasta
grated parmesan

Directions:
Directions:
Fry bacon until crisp. Drain, saving 1 T. grease in skillet.
Add olive oil and onions and saute until onions are wilted, about 5 minutes. Stir in garlic, tomatoes, salt, tarragon and pepper. Simmer 30 minutes to reduce liquid. Crumble bacon and add along with parsely. Serve over pasta, pass the cheese.
