2 cups sugar
1 ½ cups vegetable oil
4 eggs
2 cups self-rising flour
1 tsp cinnamon
2 cups grated carrots
1 cup chopped walnuts
¼ tsp black walnut flavoring

Glaze:
1 cup sugar
1 tbsp Karo syrup
½ tsp soda
½ cup buttermilk (make by adding 1 tsp vinegar to ½ cup milk)

Directions:

Preheat oven to 350º. Grease and dust with flour a 13"x 9" pan (or use non-stick pan.)

Mix together sugar and vegetable oil. Add eggs one at a time, mixing well.
Add flour, cinnamon, carrots, walnuts, flavoring. Mix well.

Pour into pan; bake 90 minutes. Frost with Grandma's glaze (or cream cheese frosting). Sprinkle finely chopped walnuts on top. Let cool in pan.

Mother's glazed carrot cake was different from other recipes I've tasted. She always made it at Christmas, along with many other desserts. Very moist and delicious!
