2 lb. boneless chicken thighs, chopped
some olive oil
½ c. chopped onion
½ c. chopped green bell pepper
1 c. chopped mushrooms
1 large clove garlic, minced
2 (14.5 is.) cans chopped tomatoes

Directions:
Directions:
In a large skillet, simmer garlic, onion, pepper and mushroooms in oil until your kitchen smells like Italy. Add the tomatoes, cover and simner for about 30 minutes. Add the chopped chicken and cook about 30 minutes and eat! Serve over your favorite pasta.

Grandma Truitt's recipe, straight from her! I emailed her while I was in college and asked her for it. She said you can add a bit of spicy to it if you like (I'm guessing she meant cayenne) but I never do. It's yummy just the way it is.
