Ingredients: Dough: 4 cups flour 3 egg whites 1 tsp. salt
Filling: 1 lb (16 oz.) cottage cheese ("dry" if you can find it) 3 egg yolks 1 tbsp. flour ½ tsp. salt
Crusts: Remaining dough edges 1 onion (roughly chopped) 1 tsp. olive oil

Directions: |
Directions:1. Combine all ingredients for the dough and mix enough to make a soft dough to roll. Set aside for ½ hour.
2. Roll out dough and cut into 3 inch squares. Reserve any leftover dough for "crusts".
3. Combine all ingredients for the filling and mix well so it sticks together.
4. Put a tsp of cheese filling into the middle of each square of dough and pinch together to form a triangle.
5. Cook cheese buttons in a pot of 3 quarts of boiling water with 1 tsp. of salt.
6. Brown the chopped onion in olive oil. Add leftover dough pieces and fry until brown. Spread the "crusts" over the top of the cheese buttons.
7. Optional: reserve some of the boiling salt water and add it on top of cooked cheese buttons to make them more moist. |

Notes: This is an old recipe from Great Grandma Doll's cookbook. I've never made it, but your dad grew up eating these kind of tasty German dishes and I know Grandpa loved it! Original recipe calls for lard instead of oil and "dry" cottage cheese, which I've never been able to find for Strudel either. I think regular cottage cheese will work just fine.
