1 ¼ cup all purpose flour
½ tsp baking soda
½ tsp salt
½ tsp baking powder

2 cups buttermilk
1 egg
¼ cup vegetable oil

Recipe may be doubled or tripled

Directions:
Heat griddle. Add oil, shortening or spray with spray oil

Mix dry ingredients. Mix wet ingredients until egg and oil are fully incorporated.
Add wet to dry. Stir until large lumps are gone. Do not over mix.

Pour, spoon or ladle onto griddle. Cook until bubbles form and pop. Flip carefully over. Cook until done. Do not over cook or the pancake will be dry. These will not fluff up.
If you want fluffier pancakes, add an additional ½ tsp of baking powder.
