½ gallon Rossel (fermented beat starter)
1-2 cups water
4-5 grated beets
1 whole peeled onion with four cuts
1 lemon
salt

Directions:
Directions:
1. Fill 4-quart pot to 1" from top.

2. Add beats, Rossell, and onions. Simmer uncovered for half an hour.

3. Add juice of 1 whole fresh lemon and bring to a boil for 1 hour.

4. Beat 5 eggs with some salt.

5. While mixing eggs very fast, add borscht little at a time so eggs don't curdle.

6. Add salt, sugar, and lemon to taste.
