Chicken-Auntie Mimi's Grandma Recipe

1-package (4-5 lbs) choice thighs or breasts, boneless and skinless
Cut chicken into 3" bite size pieces and trim off fat.

3 whole eggs
½ cup cornstarch

Beat eggs with cornstarch. Submerge chicken in mixture, making sure each piece is covered in egg.

Prepare sauce while marinating chicken.

In sauce pan add:
1 ¼ cup soy sauce
1 ½ cup sugar
½ cup mirin or sherry
¾ cup water
knob of ginger grated
3 T. garlic (or 5 cloves pressed)

Boil for 1 minute

Put flour into a deep baking dish.
Add chicken pieces
Knead the flour into each piece so that each one is well coated.
Place in a single layer on baking sheet until ready to fry.

Add 1½ inches of canola oil into frying pan.
(I use 2 cast iron pans so that frying times takes less than 1 hour)
When oil is hot, begin frying chicken, cooking throughly.

As each piece is done, immediately dip in prepared sauce.
Put next batch of raw chicken into frying pan.
Then, take out the dipped chicken and put on serving platter. This allows time for the cooked pieces to absorb the seasoning without getting too soaked.

This dish was invented by Mimi's Grandma Orimo(Nana's mom) before restaurants
featured "karage chicken". This is everyone's favorite and is known as "grandma's chicken" in her family.
