1 pkg. Jimmy Dean Sausage
8 ounces cream cheese, but into cubes
A little bit of diced onion, red bell pepper and minced garlic to taste.
1 pkg baby spinach leaves
2 cups of Italian mixed cheese, grated
1 Cup mozzarella cheese
1 can evaporated milk or 1 and a half cups heavy cream
10 eggs

Salt and pepper to taste.

Brown the sausage, remove from frying pan, set aside, and add the cream cheese. Saute onions, peppers and garlic. Add to sausage. In a different bowl, beat the eggs and add in the milk. Add to the egg mixture the 2 cups of Italian cheese. In a microwave dish, dump in the spinach, add a little water and cover with plastic wrap. Cook in microwave for 3 minutes.
In baking dish, layer the sausage first, spoon the spinach over the top, layer the mozzarella cheese next. Now pour the egg mixture over it all.
Bake in oven uncovered for 45 minutes, at 375 degrees.

Nice meal by it's self or as a side dish. You can change it up and add mushrooms or whatever you like.
