Apple layer:

6 cups sliced, peeled apples (use a tart apple, I like 1/2 Granny Smith and 1/2 Golden Delicious)
1 cup granulated sugar
4 tbsp flour
1-1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup maple syrup

Topping:

3 cups sifted flour
2 cups brown sugar
2 cups uncooked oatmeal
1 cup butter

Preheat oven to 375º

Toss apples, granulated sugar, 4 tbsp flour, cinnamon and nutmeg together in a large bowl. Drizzle maple syrup over apples and toss to mix in well. Put into a large glass or Corning Wear rectangle baking dish (like a lasagna pan), and smooth with a rubber spatula.

In a separate bowl combine flour and brown sugar. Cut in cold butter until crumbly. Stir in oatmeal, mixling well to evenly distribute oats with the flour/butter mixture. Mixture will be crumbly. Sprinkle oatmeal mixture evenly over the apples in the baking dish. Bake for about 45 minutes, until topping is golden brown and a paring knife inserted into the apples reveals that the apples are tender but not mushy.

Serve warm with vanilla ice cream.

If you want to make this a little fancier: A couple of hours before you want to serve dessert, let a quart of good vanilla bean ice cream sit out for about 15 minutes, then spoon it into the bowl of your stand mixer. Add 1 tsp of ground cinnamon and beat until cinnamon is evenly distributed. Put this mixture back into the freezer.

To serve, heat up 1 cup of caramel ice cream topping (there's a homemade version in this cookbook); Put a good-sized spoonful of the warm apple crisp into an individual serving dish for each person who is having dessert. Top each with a scoop of the cinnamon ice cream you prepared, drizzle warm caramel sauce over the ice cream, sprinkle with some coarsely chopped candied pecans (see recipe in this book.)

I love chocolate, but this is my all time favorite dessert!
