3 eggs
3/4 C white sugar
1 C dark brown sugar
2 tsp baking soda
1 tsp vanilla
1 tsp honey
1 Tbsp ground flax seed
1/2 C (1 stick) unsalted butter
1 ½ C chunky peanut butter
4 ½ C oatmeal (old fashioned)
1 ⅓ C Ghirardelli bittersweet chocolate chips

Directions:
Directions:
Preheat oven to 350º degrees, beat eggs, add sugars, baking soda, vanilla, honey, unsalted butter, chunky peanut butter and flax then add oatmeal and chocolate chips. Drop on parchment paper lined cookie sheets about 2 inches apart. Bake 9 - 13 minutes.


Helpful hints: Eggs and butter should be at room temperature prior to mixing. I under bake the cookies and let them cool on the cookie sheets for several minutes. Overbaking turns them into granola bars. Recipe makes 3 - 4 dozen cookies depending on the size. Usually I bake a double batch and freeze some.

This recipe is from my friend Steph in operations at the airport. She always makes them for the guys who plow the runways in snow storms. They are very delicious, but also very healthy and give you extra energy.
