1 small onion, chopped (or can be replaced with dehydrated onion)
6 cloves garlic (can use dehydrated)
1 can green chilies
1 can black beans, drained
1 can corn, drained
1 can diced tomatoes
3/4 cup uncooked red lentils
2 cups (16oz) mild red enchilada sauce
2 tsp cumin
1/2 tsp garlic powder
Shredded mozzarella cheese (can use nacho cheese or cheese pwd)
Flour tortillas

Directions:
Directions:
If using fresh onion and garlic, cook these in oil. Then add other ingredients and stir. Simmer until flavors mix. This can be done in crock pot, car crock pot, campfire dutch oven, stove top, etc. Serve in a flour tortilla with large amount of shredded mozzarella.
*Also delicious grilled as a quesadilla.
