4 quarts sliced green tomatoes
¼ c pickling salt
6 c sliced onions
1 tsp mustard seen
2 inches cinnamon stick
2 c vinegar
2 c sugar

Directions:
Directions:
Mix tomatoes, onions, and pickling salt together. Put ice cubes on top and let sit 3-5 hours.
Rinse well and drain.

Bring remaining ingredients to a boil in a LARGE saucepan. Add tomato / onion mixture and bring to a boil.

Pack in hot, clean mason jars. Add liquid to cover within 1/2 inch of the top.

Seal with lids (process according to company- normally 3 minutes in boiling water).
Process in a BOILING water bath for 12 minutes.

Cool and check for a good seal. If not sealed refrigerate and use immediatly or reprocess.

These were a favorite of John Moeller (possibly from his childhood). Ann Moeller would make these with the over abundance of green tomatoes from her garden.
