1 9-inch unbaked pie shell
1 - ½ c sugar
½ c butter
1T corn meal (plain)
3 large eggs
1 tsp cider vinegar
1 tsp vanilla. OR 6 T lemon juice
5 T light cream

Directions:
Directions:
Cream butter, corn meal and sugar.

Beat egg together well and add vinegar, (vanilla or lemon juice) and cream.

Fold egg mixture into butter/ sugar mixture.

Pour into pie shell.

Bake at 400º for 10 minutes and then lower heat to 325º for 25 minutes or until set.
