4 cups peeled and diced apples
2 cups sugar
2 tsp. vanilla
2 tsp. baking soda
2 eggs
2 tsp. cinnamon
2 cups flour
1 cup chopped nuts
½ cup vegetable oil

Icing
6 oz. cream cheese
⅛ tsp. Salt
2 tsp. vanilla
1 tbsp. butter
1½ cup powdered sugar

Directions:

Mix all cake ingredients by hand. Pour into a greased 9 x 13 inch pan. Bake at 350º for 45 minutes. Test for doneness with a toothpick inserted in the center of the cake. Let cool.

For icing, beat the cream cheese and butter together until smooth.
Add in salt and vanilla. Gradually beat in powdered sugar. Spread frosting onto cooled cake.
