6-7 cups whole wheat flour (I use part white flour)
2 ¾ Cups +2 tbsp very warm water
1 ¼ tbsp active dry yeast
1 heaping tbsp vital wheat gluten (found in baking aisle)
1 tbsp salt
¼ cup unsalted butter, melted
⅓ cup honey
2 tbsp [aion greek yogurt

1. Add 4-5 cups wheat flour and yeast to bowl of a stand mixer and mix to combine
2. Add warm water and mis. Cover and allow to rise for 15 minutes.
3. Add vital wheat gluten, salt, melted butter, honey and greek yogurt and mix well.
4. Add remaining 1½ cups of flour and mix until dough begins to pull away from the sides of the bowl. It should be slightly sticked when touched.
5. Knead dough with your mixer for 5 minutes (or for at least 10 minutes if ke=neading by hand).
6. Spray 2 9 x 5" bread pans with non-stick cooking spray. I also sometimes line the bottom of the pans with parchment paper. Also spray counter and hands.
7. Turn the dough onto the counter and divide into two equal pieces. Press each portion into a rectangle about 9" on the long side.
8. Roll the rectangles ito logs and place in your prepared pans. Spray plastic wrap with cooking spray and cover pans. Allow the bread to rise for about 1 hour, or until the dough is rounded over the tops of the pans.
9. Place both bred pans on the middle rack of a COLD oven. Turn oven on to 350º and bake for 30-38 minutes, until tops are golden.
10. Remove from oven and smooth a stick of cold butter over top of hot bread. Remove from pans and cool.

I think this recipe is delicious. It is more mild than bread grandmothers bread and the yogurt makes it more moist.
