⅓ c canola oil
½ c agave nectar
1 egg, room temperature
½ c plain nonfat greek yogurt, room temperature
2 oranges, zest
1½ tsp pure vanilla extract
1½ c whole wheat pastry flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 tsp ground cinnamon
½ c chopped walnuts
1 c shredded zucchini, water squeezed out

Preheat oven to 350º
Spray loaf pan with canola oil

In a medium bowl whisk oil, agave, zest, yogurt, vanilla and egg until completely combined

In a small bowl combine flour, cinnamon, baking powder, salt and baking soda

Pour dry ingredients into wet ingredients. Mix with a spatula until just combined (avoid over mixing)

Fold in zucchini and walnuts

Transfer to prepared pan. Bake for 40 - 50 minutes, or until toothpick comes out clean or with moist crumbles not batter

(If bread is browning too quickly, loosely cover it with aluminum foil)

Let cool 5 minutes then flip out of pan and cool on wire rack
