2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tbsp sugar
2 cups buttermilk (no substitutes)
2 large eggs

Directions:
Directions:
Sift flour, baking powder, baking soda, salt and sugar into a large bowl or large glass measuring cup. In a separate bowl beat eggs, add buttermilk and whisk together with the eggs. Whisk the buttermilk/egg mixture into the flour mixture just until combined, some small lumps are okay (in fact, they are desirable). Let batter sit for 10 minutes.

Heat a griddle to medium high heat, and grease lightly. (Griddle is ready when a little water tossed on the griddle causes little balls of water to dance across the griddle)

Ladle 1/3 to 1/2 cup batter onto the griddle for each pancake. Flip pancake over when small bubbles appear on the surface and continue cooking on the opposite side until golden brown. Do not flip back over - cook only once on each side. If you flip over again and recook the first side, pancakes will be tough.

Grandma made the BEST pancakes. Whenever I stayed at Grandma's house she would alternate breakfasts, pancakes one day, then poached eggs on toast, then oatmeal, then back to pancakes. She would offer cold cereal, but I always turned it down. I think I was at least 12 before I stopped wanting her to cut my pancakes and poached eggs into bites for me - - - she could cut them into perfectly even bites every time.
