5 cups flour
3 teaspoons baking powder
3/4 teaspoons salt
4 eggs
1 1/2 cups sugar
1/2 cup melted butter
1 tablespoon anise extract
1 cup chopped nuts (walnuts or almonds)
2 teaspoons vanilla

Directions:
Directions:
1. Preheat oven to 350º
2. Sift together flour baking powder and salt.
3. Mix remaining ingredients at a low speed.
4. Add dry ingredients. Add more flour if the dough is to sticky to mold.
5. Roll into 3 - 4 loaves.
6. Place the loaves onto greased cookie sheets.
7. Bake for 25 minutes or until loaves are light brown.
8. Remove from the oven and cool for bit.
9. Slice each loaf into 1/2" slices and place the slices on cookie sheets.
10. Return to oven to dry out and cool.
11. Store in air tight container.

This recipe is in my grandmother's handwriting. Pizzelles, Italian Wedding Cookies, and this recipe, Biscotti, are all called 'Italian Cookies'. I smile every time I use them.
