1 lb yellow crooked neck squash, cut up
8-10 saltine crackers, crumbled
¼ C butter
3 eggs, separated
1 onion, chopped
1 C grated cheddar cheese
½ C milk
salt & pepper to taste

Directions:
Directions:
Preheat oven to 350º. Cook squash and onion together until very tender(use a dollop of olive oil if needed to keep vegetables from sticking), drain off water and mash fine. To the finely mashed squash, add salt, pepper , cheese, butter, egg yolks and crackers that have been crumbles very fine. In a separate bowl, beat egg whites very stiff and fold into mixture. Cook in a greased casserole dish til brown.
