3 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 (28oz) can Italian plum tomatoes
1 teaspoon Italian seasoning, homemade (recipe also in this cookbook) or store-bought
Salt and freshly ground black pepper
6 fresh basil leaves, torn

Directions:
Directions:
Put a 2-quart saucepan over medium heat. Add the oil, heat for a minute, then add the onion and cook until it softens and begins to color around the edges, 2 to 3 minutes. Add the garlic and cook for 1 minute longer.
Empty the tomatoes into a bowl and squeeze them with your hands to roughly crush them (don't be shy, this can be therapeutic).
Add the tomatoes to the pot, along with the Italian seasoning. Reduced the heat to medium-low and let simmer for 20 minutes.
Season to taste with salt and pepper, and stir in the basil.

This sauce keeps for up to a week in a glass jar in the fridge, or may be frozen for up to one month.
