2 cups semi-sweet chocolate chips (13 ounces)
1/2 cup (1 stick) unsalted butter
1-1/2 cups all-purpose white flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3 large eggs, room temperature
1/2 cup white sugar
2 teaspoons vanilla extract
2 cups mint chips

Directions:
Directions:
Melt the chocolate chips with the butter; set aside to cool to room temperature. Sift the flour, baking soda and salt. Using a hand-held mixer, beat the eggs with the sugar and vanilla extract until creamy. Beat in the chocolate mixture. Using a spoon, stir in the flour, then the mint chips. Chill the dough 10-15 minutes. Preheat oven to 350 degrees. Scoop by large tablespoons onto cookie sheet(s) and bake 8 to 10 minutes.

VARIATION: Use semi-sweet chocolate chips for Double Chocolate Chip Cookies.
