Nanny’s Lemon Slice Recipe

Base
1/2 c. butter
1 c flour
2 tbsp. white sugar

Pat into 8”x8” pan. Bake 350º until light brown (10-14 min.)

Filling
3 tbsp. cornstarch
1/2 c. sugar
1 c. water
2 eggs
4 tbsp. lemon juice
1 tsp. butter

Directions:
Directions:
Mix sugar, cornstarch and water into saucepan over medium heat (stirring constantly until thickened). Add slightly beaten egg yolks, juice and butter. Cook another minute or so. Pour on top of cooked crust.

I usually completely cool the lemon slice and then whip up real whipping cream and spread on top. (Cool Whip is an option if you prefer).



Meringue (Nanny’s original topping)
2 egg whites
4 tbsp. Icing sugar
Beat eggs and sugar until becomes stiff enough to stand in peaks.
Put on top of filling (sprinkle with coconut if desired).
Bake 350º for 30 min.

Very quick dessert and oh so yummy if you like shortbread and lemon.
This recipe can be doubled and put in a 9”x 12” pan.
