2 ½ c. flour
1 ⅔ c. sugar
2/3 c. cocoa powder
1 ¼ tsp. baking soda
1 ¼ tsp. baking powder
1 tsp. salt
1 tsp. vanilla
1/2 c. soymilk
1/2 c. coconut milk

Directions:

1. Preheat the oven to 375.
2. Line baking sheet with parchment paper or silicone baking mat. Set aside.
3. In a large bowl, add the sugar and soymilk. Stir with a wooden spoon until well combined and smooth.
4. Add the coconut milk, vanilla, and mix well to combine.
5. Sift in the flour, cocoa powder, baking powder, baking soda, and salt use a sifter or fine mesh strainer. Stir until combined with the wet ingredients and a soft dough is formed.
6. Form cookies into desired size and place on to the baking sheet.
7. Bake 10 minutes and cool on the baking sheet for 10-12 minutes.
