serves 2 as main salad, 4-6 as side dish. I doubled it.
6 c thinly sliced bok choy
1 large apple, washed cored and chopped (no need to peel)
1 large carrot, shredded
1/2 c chopped red or vidalia (sweet) onion
red and//or green pepper, chopped (optional)
1/2 c unsweetened almond milk (I use regular milk)
1/2 c raw cashews or 1/4 cup raw cashew butter
1/4 c balsamic vinegar
1/4 c raisins
1 tsp Dijon Mustard

Combine bok choy, apple, carrot, onion (and peppers if using) in a lrage bowl. Blend milk, cashews, vinegar, raisins and mustard in a food processor or high powered blender until smooth. (Add water if needed to obtain thick creamy dressing consistency). Add desired amount of dressing to vegetables and stir.

This dressing is delicous, but it has an unlovely 'beige' color. I wonder if making it with a different kind of vinegar and different dried fruits would work? Apricots and white balsamic or a fig/white wine vinegar?
