1 cup of creamy peanut butter
3/4 cup of sugar [ plus some extra as needed]
1 large egg [ room temp]
3/4 tsp vanilla extract

Preheat the oven to 350
Combine ingredients in large bowl
Mix until fully incorporated
Use a teaspoon of mix to roll and form a ball.
Place on cookie sheet [ lined or sprayed]
Roll balls in sugar
Use fork times to imprint crisscross pattern on top of the cookie
Bake for 7-8 mins until lightly browned
