1 cup flour

1/2 tsp. salt

2 tsp. baking powder

1 cup sugar

1/2 cup (1 stick) softened butter

4 eggs

1 tsp vanilla

1/2 pound pitted dates

1/2 pound chopped pecans

Directions:

Preheat oven to 350º.

Cream butter and sugar, then add eggs and vanilla.

Sift flour, baking powder and salt.

Mix 1/2 cup flour mixture with fruit to keep from sticking together and mix into egg mixture.

Line bottom of loaf pan with parchment paper and coat with a good amount of nonstick spray.

Bake at 350 degrees for one hour or until done - test with toothpick.

Cool in pan.
