One, large roasted chicken from Sam's Club;
1 lb frozen mixed vegetable/Sam's; undercooked in microwave according to directions & then drained;
1 can corn, drained;
1 can kidney beans, drained;
26 oz can diced tomatoes;
1/2 lb small pasta, undercooked a little;
1/2 C minced, sweet onion
1/2 C finely diced sweet red pepper
1 round tsp minced garlic
1/4 C EVOO

Eat the wings; strip & dice the breast & thigh meat;
Keep all the skin, juices, other meat, bones, and carcass; pressure cook in Instant Pot with 2 qts water for 1.5 hours;
Discard the junk; skim chicken fat and strain the stock.;
Saute pepper, onion & garlic in EVOO;
Add the juices from the diced tomatoes & simmer for 15 minutes;
Add everything else; season & you have a hearty & easy soup as an entree.
