1 cup butter
2½ cup sugar
3 eggs
3 cups sifted cake flour
1½ tsp baking soda
2 tsp vanilla
1½ cups buttermilk
½ lbs 70% cocoa chocolate melted

Frosting
1 cup sugar
1 cup butter softened
1 tsp vanilla extract
1 cup heavy cream
6 Tbsp. flour
1 Tbsp. cocoa

Cake:

Cream butter with hand or stand mixer. Add sugar gradually until creamed with butter. Add eggs one at a time until smooth with sugar and butter. Add the chocolate and the vanilla. In another bowl mix the dry ingredients mix with the buttermilk and blend thoroughly and then mix both bowls together until smooth. Put into two 9" greased and floured pans and bake at 350ºF for 30 minutes. Let cakes cool before removing from pan.

Frosting:

Combine sugar, cocoa, butter and vanilla and beat until light and fluffy, set aside.
Combine cream and flour in a medium heavy bottomed sauce pan and heat, stirring constantly until very thick. Remove from heat and allow to cool.
Combine milk and sugar/butter mixture and beat until light and fluffy.

When I made this the first time, I split one of the cakes in half and placed blackberry jam between the two halves. It worked wonderfully.

The second time I made this I used the ganache from the truffle centers as the filling.

When making the frosting, it must be stirred constantly over low heat. Do not overcook. This must be stirred constantly or it will form a pasty dough which is unusable. Make sure to let the cream/flour mixture completely cool before mixing it with the sugar and butter portion.
