Crust:
2 cups flour 1/4 cup sugar 1 cup cold butter
Place ingredients in bowl and mix with pastry blender untio mixture crumbles. Pat into 9x13 inch pan. No need to grease but you can if you want to. Bake at 350 degrees for 10-12 minutes. Remove.
Prepare thinking while crust is baking.

Filling:
5 cups of rhubarb cut into 1/2 inch pieces or smaller
2 cups sugar
3 eggs beaten
7 tablespoons flour (slightly heaping) 1 cup whip cream not whipped

Mix ingredients together and pour on crust. Bake 350 degrees for 40-45 minutes or until it looks set. Cool completely. My oven takes at least an hour.

6 ounces soft cream cheese(use 8 ounce and divide accordingly) 1/2 teaspoon vanilla
1/2 cup sugar
1 cup whip cream - whipped
Beat cream cheese, sugar, and vanilla until smooth. Whip the cream to stiff peaks. Fold in whipped cream. Frost bars and refrigerate.


Cassie's friend from work, Larry, made this recipe using raspberries. He also made it using half strawberries and half rhubarb. He was a nice man always bringing treats to Cassie.

Cassie! Don't get all worked up about getting all the crust mixture into the super small crumbs. Just like peas or so. It is ok;-)

Cassie, the rhubarb does not have to be cut into identical sizes. Don't worry, just enjoy!!

Grandma Phyllis had a tough outer shell but she sure showed her love by doing and giving. She could sew you a beautiful dress, make you the craftiest centerpiece, a delicious meal or dessert, knit, crochet, or sew you a very special blanket and much more.

Grandma had been very ill the year you graduated. She came home from the hospital the week of your graduation party. She insisted on making this dessert. She did indeed get this made and suffered a heart attack doing it. This dessert was the hit of your party. She truly loved through giving.
