Ingredients:  
1/4 c apple cider vinegar
1/4 c water
6 T sugar
2 T butter
3/4 c flour
1/2 t baking powder
1/4 t baking soda
1/4 t ground cinnamon
1 large egg
1/4 t vanilla
3 1/4 c dried fruits (apricots,dates,cherries,raisins,etc.)
1/2 c chopped walnuts

Directions:
Directions:
In a small saucepan heat vinegar, water, sugar and butter until sugar is dissolved. Cool. Whisk dry ingredients. Beat egg and vanilla, then stir into cooled sugar mixture until combined. Add to dry ingredients. Toss dried fruits and nuts until combined. Stir in batter mixture. Fill greased, mini muffin cups with 1 T of mixture. Bake 15 - 20 minutes at 350'.. Cool in the pan 3 - 4 minutes before removing. Finish cooling on a wire rack.
