Shelba's Beef Stroganoff Recipe

1 1/2 lbs. flank steak, cut diagonally
6-8 slices of bacon, diced
1 medium onion, minced
1 clove garlic, minced
1/4-1/2 cup flour
1/2 tsp salt
1 tsp pepper
2 cups consomme (or chicken bouillon)
2 cups sliced mushrooms - if canned, or one container of sliced fresh mushrooms
1 1/2 to 2 cups sour cream (I use a 16 oz. container)

Fry diced bacon slowly in skillet. Pour off excess fat. Remove bacon and all but 2 T fat.


Combine flour, salt and pepper. Coat meat with this mixture and add to pan. Brown on all sides. (May need to add some oil to pan).

Remove meat from pan.

If needed, add a little butter to the pan and saute the onion and garlic until golden brown.

Add fresh mushrooms and cook until they release their juices. (If using canned mushrooms (with liquid) stir in to consomme/bouillon.)

Stir in consomme/bouillon.

Put meat back in the pan and simmer uncovered for about 20 minutes, until the mixture has thickened and the meat is tender.

Stir in sour cream and bacon bits and heat.

Serve over rice or buttered noodles.
