½ C. butter, softened
¼ C. brown sugar
½ C. sugar
½ C. canned pumpkin puree
1 egg
1 tsp. vanilla

1 ½ C. flour
1 tsp. pumpkin pie spice
½ tsp. baking soda
½ tsp. baking powder

Directions:
Directions:
Preheat oven to 350º and line a cookie sheet with parchment paper

In large bowl, cream butter and sugars together. Add pumpkin, egg, and vanilla - mixing well.

In a small bowl combine the flour with the rest of the ingredients. Add to wet ingredients and mix until incorporated.

Use a small cookie scoop, place approximately 1 ½ TBPS of dough for each cookie evenly on cookie sheet.

Bake for 12 minutes. Cool completely on a wire rack.

Can frost with a cinnamon cream cheese icing, or enjoy plain
