1 1/4 cups egg whites
1/4 TSP salt
1 1/2 cups granulated sugar
1 TSP cream of tartar
1 cup flour
1 TSP vanilla
1/4 TSP almond extract

Directions:
Directions:
Before you start to bake cake, sift sugar twice and the flour 4 times. Sift in separate containers. Measure flour after it is sifted.

Place egg whites in large container. Add salt and beat with wisk egg beater until eggs are stiff but not dry. Fold in sugar 1 TBSP at a time. Add flavoring. Fold in flour the same way as sugar. Pour into ungreased angel food pan. Bake slow in over at 300 degrees for 50 -60 minutes.

Increase heat slightly when cake is almost done. Remove cake from oven.
Invert pan for 1 hour. Remove from pan with spatula.
