"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
1. Prepare a 17x12 inch cookie sheet by spraying with cooking spray. Preheat oven to 375.
2. Beat butter and sugar with an electric mixer until creamy and fluffy.
3. Add eggs, one at a time, beating in between, then add vanilla, flour, salt, and baking soda, mixing well.
4. Gently fold in the chocolate chips (and nuts if using).
5. Spread dough into prepared pan. Bake for 17-18 minutes or until golden brown. These are easier to cut while warm.
