Ingredients: 24 oz plain, fat free Greek yogurt 3 oz Neufchatel 1 c cottage cheese 1 c splenda 1 lemon, juiced ½ c vanilla whey protein powder 1 extra large egg

Directions:Preheat oven to 325º F
This recipe can make either 18 cupcake sized cheesecake, 9 cupcake sized cheesecake AND 1 premade crust size cheesecake, or 1 large springform pan cheesecake
Prepare appropriate pan(s) and place inside a larger shallow pan that you will add water to (cheese cake will be cooked inside the water bath)
Place all ingredients in a blender or food processor Pulse until silky smooth and completely combined Pour into appropriate pan(s)
Start checking after 45 minutes, the center should be wiggly but not stick to your finger when touched. If it sticks to finger, add 5 to 10 minutes and check again. Continue this process until done
Let sit in water bath for 5 to 10 minutes Transfer to a cooling rack and allow to cool Put in fridge for at least 2 hours before serving Serve with strawberries |
