1½ c. Oil
2 c. Granulated sugar
2 c. Flour
1 tsp. Baking soda
1 tsp. Salt
1 tsp. Cinnamon
3 c. Grated carrots
1 c. Nuts (pecan or walnut)
4 eggs

1 stick butter ( softened)
2 tsp. Vanilla
1 lb. powered sugar
1- 8 ounce pkg. cream cheese

Directions:

Preheat oven to 325º. Grease and flour 9x13 pan.
In mixing bowl, blend oil & sugar add 1 egg at a time blending after each. In another bowl mix dry ingredients and gradually add wet ingredients mixing well stir in carrots then nuts and mix. Pour in pan and bake 1-1½ hours at 325º. Completely cool on cooling rack.

In bowl add ½ stick butter and cream cheese room temperature and beat until smooth. Add powered sugar and vanilla until smooth. Ice cake.
