Grandma"s banana nut muffins Recipe

1c. quick quaker oats oatmeal
1 1/2 c. flour
1/2 c firmly packed brown sugar
1/2 c chopped walnuts
1 tbsp baking powder
1/2 tsp baking soda

1/2 c skim milk or 3/4c. OJ
1 egg slightly beaten
1/3 c canola oil or melted margarine
1 c mashed ripe bananas (usually 2 but Grandma used 3)

Directions:

Heat oven to 400º. Line 12 regular sized cupcake tin with cupcake papers or grease and flour each cup.

Combine all the dry ingredients, mixing well. Add oil, egg, and milk just until moistened. Then add the mashed bananas. Just incorporate them into the mix. No need to stir endlessly.

Fill cups until almost full.

Bake 17-19 minutes or until golden.


**note; you can also make mini muffins --and will get close to 30-34. Just reduce the cooking time --try 9 minutes and work from there. When toothpick inserted in center comes out clean, they are done. I like them slightly undercooked..moister that way.
