85 g chocolate brown rice protein powder
1 tsp baking powder
½ c almond flour
½ c almond butter (or any smooth nut butter)
1 c unsweetened apple sauce
½ c chocolate chips of choice

Directions:

Preheat oven to 350º F
Line cupcake pan with cupcake liners and set aside

Add dry ingredients to a medium bowl and mix well
Add nut butter and apple sauce, mix thoroughly
Fold in chocolate chips

Use a scoop to portion out batter

Bake for ~15 minutes to 20 minutes (be careful not to overbake), or until toothpick comes out with moist crumbs, not wet and goopy

I started checking at 10 minutes and added 2 to 3 minutes each time the toothpick came out goopy. If they are on the verge between wet and moist, take out as it's very important not to over bake

Once cooked, take pan out of oven and let the muffins sit in the pan for 5 minutes before transferring to a wire rack to cool completely (Muffins are best once they cool completely)

Store leftovers in a ziploc bag in the refrigerator
