Ice Cream Cake Recipe

2 1.5 quart containers of ice cream (your choice; suggestions below)
¾ cup hot fudge sauce
12 Oreo thins crushed (or Reese's peanut butter thins, brownies, grasshopper cookies, etc.)
1-½ cups heavy whipping cream
¼ cup sugar
1 teaspoon vanilla
(If using Cool Whip, omit the heavy whipping cream, sugar and vanilla.)

1. Remove ice cream from the freezer and defrost about 15 minutes.
2. While ice cream is softening, line two 8-inch cake pans well with plastic wrap, leaving several inches of overhang. (1 springform pan, 2 bread pans, or 2 square cake pans will also work.)
3. Spoon soft ice cream into each prepared pan, pressing down to remove air bubbles as you go.
4. Cover with plastic wrap and press down evenly to smooth the top.
5. Freeze for 8-12 hours or until hardened.
6. One hour before assembling cake, place serving platter into freezer. (Make sure it's safe to freeze your platter!)
7. Place heavy whipping cream, sugar and vanilla into a large bowl, and whip until stiff peaks form.
8. Refrigerate.
9. To assemble cake: remove ice cream layers and serving platter from freezer.
10. Unwrap the tops of the ice cream layers and using the excess plastic wrap, remove layers from pans.
11. Place first layer on the bottom of the platter.
12. Smooth an even layer of hot fudge over the chocolate layer, leaving a ½-inch border.
13. Sprinkle crushed Oreo thins over hot fudge, and press down gently.
14. Add second layer overtop.
15. Spread whipped cream overtop of the entire cake, and freeze until ready to serve.

5/20/2020 I made this for the first time for Zach's 19th birthday. Emma, Jasmine, and Braeden joined Wendell, Zach and me. We used Moose Tracks ice cream (equivalent to Reese's peanut butter cups) for both layers, and then crumbled Reese's peanut butter thins (dark chocolate) to sprinkle over the fudge layer. It was amazing!!
6/16/2020 I am making it again for Jasmine's 22nd birthday. She requested Super Brownie and Cookie Dough for her layers. We are using crumbled Oreos, a favorite of both Jasmine and Braeden!

Mint Chocolate Chip: Mint Chocolate Chip ice cream + crushed thin mint cookies + hot fudge

Chocolate Brownie: Chocolate Brownie ice cream + chopped brownie filling + chocolate sauce filling

Reese's: Reese's Peanut Butter ice cream + chopped Reese's peanut butter cups and chopped peanuts + hot fudge sauce filling

Ultimate Oreo: Oreo ice cream + chopped Oreos + hot fudge filling
