12 oz can solo almond paste
½ cup sugar
1 scant cup confectioners sugar
2 egg whites
2 cups pine nuts
2 egg whites

Directions:
Process the almond paste and white sugar in a food processor until smooth. Then add the 2 egg whites and confectioners sugar and process again until smooth.

Chill dough at least 15 minutes or until firm.

Preheat oven to 325º while dough is chilling.

Whisk 2 egg whites in a small bowl and place pine nuts on a flat plate.

With lightly floured hands, shape 1 inch balls of dough and dip in the egg whites; shake off excess and roll in the opine nuts-press lightly so they will stick. This is the messy part but it works!
Arrange cookies on a silpat or parchment lined cookie sheet allowing at least 1-1½ inches between each cookie.

Bake 10-15 minutes or until edges have browned.

Cool one minute on the pan and then transfer to a wire rack to finish cooling.
