2 lbs. dover sole fillets
1 Tbsp. milk or water
1 egg
1 cup flour (optional)
salt and pepper
1 cup of bread crumbs, cracker crumbs or cornmeal
Butter for frying
1 lemon cut into wedges
6 sprigs of parsley

Directions:
Directions:
Wash fish by dipping it in cold salt water. Dry with paper towels. Dredge fish is flour seasoned in salt and pepper. Blend eggs and milk. Dip floured fish in egg. Roll fish in bread/cracker/cornmeal crumbs and let stand for a few minutes to dry. Place butter in fry pan and melt until hot but not smoking. Fry frish until lightly brown. Turn carefully with a spatula until other side flakes with a fork when tested. Remove from butter.
Garner with parsley and lemon.
