Orecchiette with Kale and Sausage Recipe

1 box of orecchiette pasta
4 Italian sausages
1/4 c sun dried tomatoes
Grated Parmesan cheese

For the sauce:
1 shallot
2 cloves garlic
Juice of 1 lemon
3/4 c chicken broth
1/4 c half and half
2 c kale
1 tsp Italian seasoning
Salt and pepper

Directions:
Boil water, adding a decent amount of salt (water should be salty). Cook pasta according to instructions.

In the meantime, cook sausage in skillet or on the grill.

To make the sauce, dice shallot and garlic and sauté until tender. Add chicken broth, lemon juice, Italian seasoning, salt and pepper. Bring to a boil then simmer.

When pasta is almost finished, add half and half to the sauce and stir. Add kale and cook until mostly tender.

Cut the sausages and add to the sauce along with the sun dried tomatoes. Add pasta and toss.

Top with Parmesan cheese, salt, and pepper. Enjoy!
