1 ⅓ cups powdered sugar
⅔ cup almond flour
3 egg whites room temperature
¼ cup white sugar

Sift powdered sugar. Lightly mix almond flour into powdered sugar and set aside
Whip egg whites until frothy add white sugar and whip on high unti; stiff peaks form

Fold ½ almond flour mixture into egg whites. Gently fold in remaining flour mixture place batter in pastry bag with large round tip pipe 1 inch circles onto parchment lined cookie sheet approx 2 inches apart preheat oven to 325 let cookies rest and dry for approximately 30 minutes or until dry and not sticky to the touch bake in bottom rack of oven for six minutes rotate tray and cook another 6 minutes let cool completely

Place 1 teaspoon of whatever filling you have between 2 cookies to make a sandwich


For flavored macarons and/or colored macarons add flavoring and/or coloring when folding flour mixture into egg whites
