3 Tbsp chia seeds *I needed 5-6 Tbsp to get it to ‘thicken’
1 c milk (almond, coconut, or grassfed whole milk)
1 Tbsp maple syrup or honey
1 tsp pure vanilla extract
1 cup kiwi diced
Coconut flakes for topping
Berries for topping

Directions:

Pour the milk into a medium bowl. Gradually add the chia seeds while constantly stirring with a wire whisk or fork. Stir well to avoid any chunks. Add the maple syrup and vanilla extract and mix. Cover the bowl and refrigerate for at least 4 hours or overnight.
Before serving, puree the kiwi in a food processor. Mix the kiwi into the chia pudding.
Using small glasses (or dessert dishes), pour the chia pudding and top the pudding with coconut flakes and berries.

I had to use 2x the recommended chia seeds. I used whole milk and pure maple syrup, and loved the taste of the pudding before I added the kiwi, it had a warm creamy flavor that was quite different from the fresh tangy kiwi. I plan to experiment with other fruit and spice combinations as well, maybe peach/nutmeg, pear/fresh ginger, apple/cinnamon, etc.
