200 g clarified butter (ghee)
100 g confectioner's sugar
350 g all purpose flour
50 g milk powder
½ tsp vanilla extract
¼ tsp salt

1. In an electric mixer fitted with a paddle attachment, cream clarified butter, confectioner's sugar, and salt on medium speed for 5 minutes.
2. Change to a dough hook attachment, add the flour and milk, and knead into a soft dough. Leave covered for 4 hours.
3. Preheat oven to 250 deg F. Line baking trays with parchment paper.
4. Roll 9 gram balls and place on the baking tray, spaced well apart.
5. Using a small fork, make impressions by pressing lightly on the center of each ball, and sliding the fork away from the center to prevent sticking.
6. For round-shaped cookies, roll into balls, and press lightly in the center with your finger.
7. Bake for 30 - 35 minutes, until cookies turn lighter in color.
8. At the 20 minute mark, switch the top and bottom trays and turn them around.
9. Transfer to a cooling rack. When completely cooled, store in airtight containers.
